Quick answer: all three Haki types are unlocked by finishing trainer questlines — Haki Trainer (Armament),Observation Haki Trainer andConqueror Haki Trainer. Armament adds +25% damage by default, Observation grants 5 dodges, and Conqueror's gives +1% damage per level.
Armament Haki
Obtainment: Obtained by Haki Trainer.
Haki increase player dmg by 25% default
and each leveling up haki, will add 0.5% to it
You get 1 XP per NPC killed
To get max Haki level, u gotta kill 15K NPC in total
Max Haki Level: 75
Total Dmg boost you got: 62.5%
Observation Haki
Obtainment: Obtained by Observation Haki Trainer
Observation Haki give player 5 dodges
and each 10 lvls give you +1 extra dodge
You get 1 XP per dodge attack
Max Ovservation Haki Level: 50
Total Dodges you got: 10 dodges
Conqueror Haki
Obtainment: Obtained by Conqueror Haki Trainer.
Conqueror Haki will give you permanent DMG boost every level (started at 0%) and also deal DMG
and each leveling up conqueror haki, will add 1% to the dmg boost
You get 1 XP per NPC killed
To get max level, u gotta kill NPCS for exp

Haki colors
Haki color is cosmetic — reroll it with the Haki Color Reroll item. Normal colors have a 9.9% chance each; rare colors are much harder to roll.
Use Haki Color Reroll to change your Haki color.
